The Philadelphia-based food-, facilities- and uniform-services company has made a concerted effort to source the cuisine it offers across its portfolio of school cafeterias, hospitals and resorts. Deploying new technology that allows the company to keep a close eye on the seafood it procures, Aramark, now 60 years in business, has transitioned to wild salmon and pollock, which the Monterey Bay Aquarium’s program Seafood Watch deemed a “best choice.” According to Lindh, a former National Restaurant Association executive, the move can only help his business.
